Crema fave e carciofi - Fava beans and artichokes cream soup

Fava beans are the first legume you can find at the market in spring; in some Italian areas are one of the most loved ingredient for the traditional Easter Monday picnic (pecorino cheese and fava beans is an easy and tasty union). In the same period we can find the second artichokes flowering, and this allows us to cook a delicious cream soup.

Ingredienti (per una porzione)
-200 gr di fave sgusciate
-una patata piccola
-mezzo carciofo
-un cucchiaio di panna da cucina
-burro
-olio d'oliva, sale e pepe q.b.

Ingredients (for one portion)
-200 gr of fava beans (without peel)
-one potato
-half artichoke
-one spoon of cream
-butter
-olive oil, salt & pepper

Procedimento

Preparation
Boil fava beans with potato in salt water. Hold a little part of the beans by and blend all the remaining vegetables. Add a knob of butter and the cream, then cook the cream soup for 10'. In the meantime, slice the artichoke and brown it in some oil (a spoon).
Serve the cream soup with the boiled fava beans and the artichoke. If you like it, you can complete the dish dusting with pepper.

SPEKULATIUS
Biscotti natalizi speziati - Spiced Christmas Cookies

Ricetta presa da Cookaround
Recipe took from Cookaround

I came to know Spekulatius cookies thanks to a German friend who told me how in Germany they use to give them as Christmas present, just like our panettone or pandoro.
The traditional cutters for these cookies are just gorgeous and very deteailed, but we'll do with what we have: Christmas trees, stars or angels, because they're delicious anyway :)

Ingredienti

Ingredients
- 250 gr 00 flour
- 50 gr almonds, ground
- 150 gr sugar
- 90 gr butter, cut in small pieces
- 1 egg, whole
- 1 tea spoon baking powder
- 1 pinch of salt
- spices (I usually follow my taste, you can use the following or less or more, and vary the quantity): 1 tea spoon cinnamom powder, ½ tea spoon clove powder, ½ tea spoon cardamom poweder, (optional and instead of cardamom: ½ tea spoon ground ginger, ½ tea spoon nutmeg powder)
- 2 or 3 table spoons of milk

Procedimento

Preparation
In a blow mix the butter and the flour, paying attention to not make it melt too much; add sugar, spices, salt, baking poweder, almonds and mix everything.

The dough will be quite dry: add the egg (that you had previously slightly beaten aside) and mix again; if necessary add the milk, one spoon at a time, and mix until the dough is compact. Shape it as a ball and set it to rest in the fridge for half a hour; in the meanwhile you can light the oven at 180°C.

Take out the dough from the fridge and with a roll out the dough to obtain 4 or 5mm flat (if you prefer you can cut the dough in two halves) then go on to cut out the shapes you like, putting them on a baking pan covered with wax paper.

Put in the oven for 7 or 8 minutes or until the cookies are slightly colored; they might seem not well baked and still soft but don't worry, they'll get harder once cooled down :)

I bambini li adorano :)

And do not forget that now, while they're still hot, it's when you can punch the holes for the thread to hang them on the Christmas tree! Kids loves them :)

CUCCIA

Viva Santa Lucia... 2

TRADIZIONE
TRADITION
On 13 December, following a strong famine that had struck Sicily, in Palermo (or Syracuse, no one knows exactly) arrived a ship loaded with grain; people, hungry, didn’t have the time to make flour of it, and cooked the grain the way it was! That ship was regarded as a miracle of Saint Lucia (falling, in fact, that day).
Since that day, it has become a tradition in Palermo, on the day of Saint Lucia, not to eat foods containing flour, but cooking recipes that involve rice and raw cereals: “risotti” (rice-based recipes), “arancini” (similar to croquettes but much larger), stuffed potato pie, and for sweet, "the cuccìa".

INGREDIENTI
- 500 gr. Grano (integrale, non macinato!)
- 500 gr. Ricotta
- 250 gr. Zucchero
- Sale
- Cannella
- Vanillina
- Canditi o gocce/scaglie di cioccolato

INGREDIENTS
- 500 gr. Wheat (whole, not ground!)
- 500 gr. Ricotta cheese
- 250 gr. Sugar
- Salt
- Cinnamon
- Vanilla
- Candies or chocolate chips/drops

Aggiungere all’impasto il grano (precedentemente colato e fatto riposare) e mescolare.
The grain must be kept wet for two days and then cooked with a little salt for at least one hour.
When cooked, put the grain to flow and let it settle for an hour.
Take out the ricotta cheese and leave the water casting until it is dry. Then, with the electric mixer, knead it with sugar and add a packet of vanilla, cinnamon and candied fruit or chocolate (I recommend chocolate!) at choice. Add the corn mixture (previously poured and settled) and mix.
You can put it all in a single container or divide it into several small portions in some bowls, sprinkle with cinnamon as if it were sugar.

RICETTA ORIGINALE
ORIGINAL RECIPE
The above is a more elaborate recipe that is also found in pastries, but the original recipe is much more simpler! My grandmother ate it for breakfast in the morning and it’s very similar to our cup of milk and cereals: wheat boiled in hot milk with 2 teaspoons of sugar and, sometimes, a little cocoa powder.

ALTRE RICETTE
MORE RECIPES
In recent years, pastry chefs have created more delicious variations of this cake, the most common of which involves chocolate pudding instead of ricotta.

Cooking With The Crafters - Sacher Torte

 [Versione in Italiano]
Which cake to prepare for a birthday party when the birthday boy is a boy of 40 years?
Obvious: 4 Sacher Torte!

To avoid mistakes I chose a recipe virtually infallible, my absolute favorite, the cake frosting that has that, in addition to having tastes great, has a perfect texture. Remains soft, shiny and makes it look nice, even a cake as ugly as mine!

The recipe comes from Francine of  CucinaConMe, I asked her to be able to publish here and she said yes.
I follow the recipe almost to the letter. I added a couple of changes dictated purely out of laziness, I will add in cursive, while the rest is written by Francine! :)

Ingredients:

For the base: 100 g butter, 90 g sugar, 4 eggs, 100 grams of flour, 1 pinch of baking powder, 100 grams of dark chocolate, salt.
To garnish: 150 g apricot jam.For the frosting: 6 cl of fresh cream, 75 gr of dark chocolate, 20 g butter, 20 grams of sugar.

For the base of the cake:
Cut the butter into cubes and place in a bowl, preferably with high sides. Leave at room temperature for half an hour (I lazy, I do run 7-8 seconds in the microwave ...), then beat with electric mixer, adding a little at a time half the sugar.

Continue beating at low speed, add the egg yolks 4. Add the flour mixed with baking powder, stirring with a spoon. Melt the chocolate and add to the mixture.

Whisk the egg whites with a pinch of salt and, when they are already firm, add the remaining sugar and continue whipping for half a minute. Gently mix together the egg whites, stirring from the bottom up.
Pour into a mold of about 20 cm in diameter (I use aluminum pans round because even if they give a slightly conical shape I find that conduct heat in the right way) greased and floured and bake in preheated oven at 170 degrees for about 40 - 45 minutes. Unmold and let cool, preferably on a wire rack.

The jam:

Cut the cake into two horizontally. Spread half of jam on a disc and cover with the other half. To get a cake with a nice smooth surface with no "bumps", simply reversed the cake and presents the bottom up. Spread the jam remained on the surface. If the jam is too thick to be spread, you can heat it slightly or blend.

The icing:

Put the cream in a saucepan over low heat. Bring to a boil and remove from heat. Wait 30 seconds and then return to the boil.
Turn off the heat immediately and add finely chopped chocolate, butter and icing sugar. Stir until you have achieved a smooth and homogeneous consistency.
Let the frosting cool, stirring with a spoon and pour it on the cake: Pour in the center after arranging the cake on a wire rack. When the icing begins to fall on the sides spread with a spatula or the back of a spoon to cover them well.

Store in refrigerator until ready to serve.

With a spoonful of whipped cream as a side dish! (Otherwise there is no taste;))
Thanks Francine! :)

Cooking with the crafters - Pumpkin Risotto

[Italian version]

Our section dedicated to Italian traditional recipes returns, at last!

In the autumn period our markets and vegetable gardens abound with  pumpkins, a vegetable typical of this season.

Pumpkin is used for lots of recipes, both sweet and salted.

Today we offer the recipe of a first course: pumpkin risotto.
Pumpkin risotto is a traditional dish of Northern Italy, in particular it is very popular in Lombardy, the home also of pumpkin ravioli.
This risotto is  very easy to prepare, based on simple ingredients, but it tastes great ... It's excellent  when eaten on autumn and winter days.
The origins of pumpkin risotto are modest:  pumpkin was a very poor vegetable that was grown and eaten strictly by peasants.

Ingredients:

 Vegetable stock                       1 litre
Butter                                     50 grams
onions                                    1
Rice                                        400 grams
Pumpkin                                 300 grams
white wine                              ½ cup

Preparation:

1. Clean and chop the onion.
2. Clean and cut pumpkin into cubes  sized about one cm.

3. Sauté the onion in a saucepan with the butter. After 2 - 3 minutes add the diced pumpkin and sauté over low heat. If it becomes too dry and tends to stick to the saucepan and burn, add a few tablespoons of vegetable stock.

4. Cook  the pumpkin for  5 minutes, then add the rice and sauté, stirring frequently. When the rice is toasted, pour the wine and let it evaporate.
5. Now add the stock  a little at a time and let it dry slowly during cooking. Stir from time to time, making sure the rice does not become too dry.
6. After about 12/14 minutes taste the risotto to check whether it is done.
Now the risotto is ready!
You can  taste it this way or make it even tastier by adding a generous sprinkle of grated Parmesan cheese.
..
Enjoy!
