Cooking with the crafters #6 - Carnival of Venice's Sweet Treats

At last we have another Cooking with the Crafters' episode! This week and the next, in honour of the Carnival of Venice, we show you two Venice traditional recipes, cooked (and tasted) for us by AliceCouture.

I'm the greatest glutton, so I decided to show you the traditional sweets of Carnival of Venice: Frittelle and Galani. They are both sort of fritters / doughnuts sweets, made with almost the same ingredients but their shape and consistence vary. And they're both delicious!
This week and the next you can find here some brief historic outline about them and obvously, the recipes!

Frittelle (Venice's dialect: “Fritòe”)

The frittella (fritter) has its origins in the Serenissima lands, since 1600 A.D. 
In that period the “fritoleri” (people who made the fritters), were the only ones allowed to produce and sell these delicacies, and they set up an association made by 70 of them. To each of them was assigned a commercial area and furthermore they had a guarantee: only their heirs could succeed to them!
The ingredients used to make Frittelle haven't changed so far, and even now they are the most famous sweets for the carnival, not only in Venice but everywhere in the “Bel Paese”.

The Recipe

Ingredients:
20 gr. /0.7oz brewer's yeast
300 ml / 1.25 cup of milk
150 gr. / 5.30oz all purpose flour
3 eggs
35 gr. / 1.23oz sugar
180 gr./6.35oz margarin or lard
30 gr. / 1oz raisins
30 gr. / 1oz pine-kernels
1/2 coffee cup of grappa veneta
peanut oil to fry
confetioners' sugar
a pinch of salt

How to:
First of all you need to revive the raisins in tepid water.
Put the milk in a bow, add the yeast and 2 tablespoons of flour, whisking in the meanwhile to make it smooth.
Once the douch is smooth, cover the bowl with a cotton cloth and let it grow until it is doubled.
Now get another bowl and put the rest of the flour in it, add the dough, a whole egg and three yolks, mix everything and add the sugar, the lard or margarine (not directly from the fridge!) and a pinch of salt.
Mix everything again and add the rest of the ingredients: the pine-kernels, the raisins (well squeezed) and the grappa; mix again, cover with the cotton cloth and let it grow for another hour.
In a large pan warm the oil and when it's ready use a tablespoon to spoon the dough into the oil and make it fry till it's golden; then put in a dish covered with blotting paper.
Cover the frittelle with confetioners' sugar, and you're done! Buon appetito! :)

INTERVIEW: Going to Know... Valeriatelier!

Today we are going to know an artist from Turin: Valeria of Valeriatelier .
In her etsy shop you can find original paintings, decorated journals, ACEO (tiny, pocket masterpieces), colorful bookmarks and felt and paper maché objects! So difficult to choose among such pretty things!!! :)

1. What's the name of your business, what do create and sell?
My shop is called ValeriAtelier.
I gave this name to my shop because I imagined it as an atelier, a creative place where 1000 different things arise.
Here you can find and buy my paintings, drawings, jewels and paper and paper maché creations.

2. What are your inspirations in your art and life?
My source of ispiration is not only one!
I draw inspiration from all what surrounds me..
Nature, animals, everyday life, movies or books.

3. Do you listen to music while you create? If so, what?
When I paint sometimes I listen to the music.
I’ve no favourite kind of music, I listen to everything.. from contemporary to classical music.
On the contrary, when I dedicate to creative project of different kinds, I enjoy the silence. In such way I concentrate better.

4. What is your studio or work space like?
I have no a definite work space.
My house is big and I easily move from a room to another. I follow “the best” light.
In summer I put on the balcony where I feel good all day!

5. What 3 things can't you live without?
I used not toh ave nothing irreplaceable in my life and live what is necessary. The less you’re dependent the more you’re free!
But if we want to give 3 options, I could say as follows:
My freedom (in every field of life)
My cup of tea in the morning
My bed (I’m lazy and I’d like to spend my time on it!)

6. What is the best creative advice you have been given?
I received few suggestions on creativity. The best suggestion is: to have my own style.
To create a style making me unique, recognizable and special. This is not an easy suggestion to put in into practice but it’s a big help if you work on it.

7. What's new? Any products or projects you'd like to share?
As you can see in my shop, I dedicated to Fimo in the last few weeks.
I’m making buttons, pearls and other small things with this material.
I’m enjoying a lot! I love this kind of material for its versatility and bright colours very similar to mine.
I think I’ll go on with this new experiment because I want to understand what it can give to me and my shop.

Tutorial: Maglia a mano

[English version]

Oggi parliamo di maglia a dita, ovvero “finger knitting”, che è un modo per intrecciare un filo di lana per formare una striscia stretta, o un lungo tubo, lavorato in modo simile alla maglia a ferri.

Vi sono diverse tecniche per la maglia a dita: qui vi propongo quella secondo me più semplice e versatile. Le spiegazioni sono state scritte per chi è destro, ma funzionano sostanzialmente anche per i mancini, basta fare riferimento alle foto e... rovesciare tutto!

Cominciamo:

fig.1 - Primo giro d'avvio

1 – Prendiamo un filo di lana piuttosto grosso, e con la mano sinistra tesa davanti (la destra per chi è mancino) stringiamolo alla base del pollice. Con l’altra mano, incominciamo a passarlo dietro all’indice e davanti al medio, dietro all’anulare e davanti al mignolo. Al ritorno, facciamo l’inverso: giretto dietro al mignolo, davanti all’anulare, dietro al medio e davanti all’indice.
Insomma, fate come nella foto che fate prima.

2 – Rifacciamo di nuovo la stessa cosa, in modo da arrivare come in figura. Teniamo i due giri ben separati.
Ci troveremo con due “anellini” per ogni dito.

3 – Cominciando dal mignolo, passiamo l’anellino più vicino alla base del dito sopra l’altro, e lo sfiliamo dal dito verso il dorso della mano.
Ripetiamo per tutte le dita.

4 – Quello che abbiamo fatto fin qua è il “movimento base” della maglia a dita. Adesso come vedete ci troviamo con un anellino solo per ogni dito: facciamo subito il secondo, per procedere alla stessa maniera di prima.

5 – Passiamo il filo, dalla parte del dorso della mano, fino al mignolo, e poi facciamolo girare davanti, in modo da avere un “anellone” tutt’intorno alle dita.
N.B. Per chiarezza, nella foto ho tenuto le dita aperte e ripassato il filo sopra all’indice, ma lavorando è molto più pratico tenere l’estremità del filo fra la punta del pollice e quella dell’indice.

Adesso rifacciamo come nel punto 3: passiamo l’anellino del mignolo sopra l’anellone e lo sfiliamo dal dito, poi l’anulare, il medio e l’indice. Ecco fatto il secondo giro!
Continuiamo a ripetere i punti dal 3 al 5… ecco fatta la maglia!

6 – Sul dorso della mano si va formando una cosa (nel mio caso un po’ maldestra), che diventerà la base per le vostre creazioni di maglia a dita. Quello nella foto è il rovescio del lavoro…

7 – …ed ecco anche il “dritto”. E’ una striscina che sembra fatta a coste, che potete lasciare così, oppure…

8 – …tirando (delicatamente) il filo d’inizio, trasformare in un tubo.

Vi ricorda qualcosa questo tubo? Che ne so, la Maglieria Magica, o le caterinette (“tricotin”) di quando eravamo bambine? Brave, la tecnica è esattamente la stessa, solo che fatta con le dita invece che con uno strumento!

9 – Quando avete fatto un tubo che vi pare abbastanza lungo (ricordatevi di tirarlo ogni tanto: il tubo è più lungo della maglia che fate mentre lavorate!), tagliate il filo un po’ lungo. Fatelo nuovamente girare sul dorso della mano e poi davanti al mignolo.
Infilate l’estremità del filo dall’alto verso il basso nell’anello del mignolo, e sfilate l’anello come al solito. Ripetete per tutte le dita. Semplice, no?

Come usare questi tuboni? Potete semplicemente avvolgerli attorno al collo come sciarpe o scaldacollo, farne trecce da usare come braccialetti o cinture o cucirli per creare tappeti. Non c'è limite alla fantasia!

Waiting for Mardi Gras in Venice

Imagine to be in a silent lagoon: a city built on water, where you can walk at your own pace and you don’t need to cross busy streets.
Picture yourself in Venice.
Here a special story has been going on since about 1000 A.D., when an official document speaks of “public amusement in the period before Easter”: it is the Carnival of Venice.

In that period Venice was a romantic place of endless suggestions, populated by artists, musicians, riches and nobles, where pleasure, dreams and desires could easily come true, and during Carnival everything was possible.
To be true, Carnival has even more remote roots, going back to ancestral cults present in almost all ancient societies, like the Roman cult “Saturnalia Latini”, which motto was “Semel in Anno licet insanire” (Once a year you can get out of control). A similar purpose was animating Venetian oligarchy when, for a short period every year, they let poorer people wear a mask to imitate the rich and mighty ones: it was a useful way to keep under control social tensions.

Nowadays, Carnival can be considered as a symbol of the switch from Winter to Spring and begins in the period before Easter. Stages are built in the main places like San Marco Square and Rialto Bridge, and special events take place: concerts, traditional masks parades, theatre shows, buskers shows, gala dinners.
People come to Venice from all over the world to enjoy this amazing happening; they wear bizarre masks, dance in the tiny streets and toss colourful confetti and streamers to each other.

This year the Venice Carnival will be a tribute to the Unification of Italy (for the 150th anniversary) and Women (as Mardi Gras will be on 8th March), it will last from February 26th to 8th March and a special silent Grand Canal regatta - enlightened by the soft light of thousands of candles - will take place during the last night.
If you happen to be the neighbourhood during that days you might better to pay a visit to the most special city in the most special days of the year. :)

150 anni Unità d'Italia

[Versione inglese]

Il 17 marzo 1861 venne dichiarata l'Unità d'Italia.
Promotori dell'unificazione furono gli intellettuali e i politici del tempo, ispirati dagli ideali della Rivoluzione Francese e dal desiderio di non veder mai più la nostra penisola smembrata sotto l'egemonia di diverse potenze straniere. Il popolo, in particolare i contadini, non furono felici nè presero parte al processo di unificazione; sempre molto pratici erano più interessati ad aver cibo nelle pance piuttosto che ideali per la testa.


Cloud Number Nine

In effetti l'unificazione della penisola e la nascita dell'Italia vengono tuttora ritenute da alcuni una forzatura storica; Cavour stesso disse che nonostante la vittoria nè gli italiani nè l'Italia erano stati "fatti".
Eppure, dopo 150 anni siamo qui, popolo italiano, uniti nella nostra indolenza di cittadini che pensano principlamente a riempirsi la pancia, che vedono andar via i propri giovani con la testa piena di ideali e le tasche vuote, restii a piegarsi a una macchina sociale che addormenta le coscienze e le piega poco a poco.
Siamo qui, uniti da nord a sud da una passata grandezza, da un clima stupendo, da una tipologia di vegetazione unica al mondo, paesaggi da sogno, da una lingua comune ricca di per sè e arricchita ancor più da tanti dialetti diversi, da una creatività solare ed effervescente in tutti i campi, da un forte spirito pratico e un'altrettanta forte apertura agli altri, da una ricchezza culturale enorme.
